Extra Seedy Peanut Butter Granola Bars

What you need: 

1 cup oats
1/3 cup chia (soaked)
1/3 cup buckwheat (soaked)
1/3 cup black sesame seeds
1/3 cup sunflower seeds
1/3 cup hemp seeds
1/2 teaspoon cinnamon (preferably fresh ground)
1/4 teaspoon sea salt
1/2 cup maple syrup
1/2 cup chunky old fashioned peanut butter

What you do: 

Soak the buckwheat over night in water, strain them before adding them to the recipe (they may be sticky but just shake them out a bit). soak the chia in about 1/3 cup of water minutes before you add it, it will fluff up and get a nice sticky texture.
Mix together the dry ingredients first and then add in the wet ingredients, mix well. spread evenly over a greased cookie tray with a spatula. bake for 35 minutes at 250 F (though if you have a dehydrator i think this recipe would be lovely raw).

SO HOW'D IT GO?

Before completing these bars, I tasted the batter and I thought it was so-so.  So I added some carob powder, which helped, but I still think they are missing something.

My modifications: pureed dates (1 cup of dried dates that were soaked overnight) instead of maple syrup, pumpkin seeds instead of sunflower seeds, and the addition of carob powder.
