Excellent Vegan Wacky Cake

What you need: 

2 tablespoons cocoa
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup sugar
1 teaspoon vanilla
1 teaspoon vinegar
5 tablespoons cooking oil
1 cup water

What you do: 

1. Preheat oven to 350 degrees F. Mix the dry ingredients into one bowl and the wet (except water) into another.
2. Slowly pour the dry into the wet, and stir. Mix in water. Stir completely so that there are no clumps. Pour into a cake pan of your choice.
3. Bake for 25-30 minutes.

Another thing I forgot to mention (should really think before posting) is that I usually only use half the amount of oil. Sometimes I'll sub it with applesauce, but more often than not, I'll just add a little bit more water.

Oh, I forgot to mention, I make these into cupcakes a lot of the time, too. I think i like them best that way, because when you use too big of a pan, the very middle can sometimes be a little wet.

You know, I've been making this recipe for ages now. And it's soo versatile. For instance, I only use half the sugar, I am always subbing ingredients, and adding little things. I love little bits of lemon peel in there, chocolate chips. I usually add an extra tablespoon of cocoa, and I almost ALWAYS double the recipe because of how fast it gets gobbled up.
I've made variations without cocoa. I've used double the lemon juice instead of vinegar. I've used liquid sweeteners instead of cane sugar. I always just eye out the water in the end to get the right consistency. It's always different for me, but it always tastes amazing.

LOVE this recipe as cupcakes. I made 3 batches tonight for a potluck tomorrow, subbed coffee for the water, baked for 23 minutes and they came out great. Filled them with chocolate frosting and fresh strawberries, they taste like a strawberry frappuccino! Great recipe!  ;)b

Oh this was so good!  I made a mistake by making it first thing this morning and forgot the baking soda.  They came out like brownie cupcakes, but everyone ate them anyway.  The second time I made it the right way and they were light and fluffy and so delicious.  I used 4 T. cocoa powder, 4 T. oil instead of 5 and I probably could cut that back even more, 1 cup of strong coffee in place of the water, and vegan chocolate chips from Whole Foods.  I also made the icing mentioned here, but I didn't have any instant coffee on hand, but I had a packet of instant cappuccino mix and used that instead.  The icing was fantastic and it looked and tasted great.

You cannot go wrong with this cake! I subtracted one tbs of flour and added 1 tbs more of cocoa powder to make it more chocolate-y and added vegan chocolate chips. I bake it in a loaf pan with parchment paper on the bottom. If you use a loaf pan I'd suggest lowering the heat a little - it takes a while for the center to get cooked.

I forgot that I was out of vanilla and cocoa powder when I started making this so I turned it into a spice cake. I used about a teaspoon of cinnamon and a couple shakes of allspice. I made a glaze with powdered sugar, veg. margarine, cinnamon and almond milk and drizzled it on top. It turned out awesome! Thanks for the recipe!

My family has been making this wacky cake for years.  I got the recipe from my grandma.  The only difference is that we make it all in the pan we cook it in.  We put all the dry ingredients in a 9x9 pan, pour the wet ingredients one by one on the top, give it a good stir and throw it in the oven.  No extra dirty dishes that way ;)b

We enjoy this..it's very similar to the super moist chocolate cake...but maybe this is somehow a little better! I followed the recipe, but added vegan chocolate chips to the batter, and then took the advice about the chocolate syrup on top after it came out. I think it will be even better when it's cooled a little (we can never wait to cut it!). : )

This was awesome! Usually vegan cakes are dense and don't stick together well because of the lack of eggs, but this tasted like it wasn't vegan, you rule!!!
