"Egg" Drop Soup

What you need: 

1 cup rolled oats, raw
5 cups water
2 cups vegetable broth
1-2 green onions, minced
salt, to taste
1/4 teaspoon white pepper
few drops sesame oil, optional

What you do: 

1. In a pot, combine oats and water. Bring to a boil, then cover and simmer for 1 hour. Watch it, as it may want to boil over.
2. Remove from heat, let cool. Strain out oats. Keep gelatinous type liquid.
3. Combine with hot vegetable broth and remaining ingredients listed above.

SO HOW'D IT GO?

This was really good as is. I didn't have any white pepper so I substituted regular black pepper and it turned out just fine.
I wasn't able to get all of the oats out of the liquid, but it wasn't that big of a deal.

I used Better Than Bullion's vegetable base, but I think next time I'm going to try and use Not-Chik'n Bullion Cubes... I think traditional egg drop soup is made with chicken broth, so maybe it will taste more authentic?

Sure cured my craving for it!

This was really good!

I am glad to find a vegan version of egg drop soup. A pinch of termeric can be used for a more yellow colour. Also, tiny pieces of tofu could go well with it also.
