EASY Wild Rice & Mushroom Casserole

What you need: 

2 cups wild rice
1 vidalia onion, sliced
6-8 ounces white mushrooms, sliced
1-2 cloves garlic, diced
4 cups vegetable broth

What you do: 

1. Add all ingredients except broth to crockpot or pot.
2. Pour broth over top and cover.
3. Cook on low heat for 45-60 minutes, or until vegetables are soft and rice is finished.
Source of recipe: Modified from a cookbook for mushroom cake fritters that had too much oil.

SO HOW'D IT GO?

This was good. The only change I made was I added some thinly sliced carrotts. :)

This was very easy recipe to prepare. I doubled up on the sliced mushroom and added some beef-less tips. I served it with steamed brussel sprouts. Very good!    ;)b
