Easy Vegan Chocolate Cake

What you need: 

3 cups flour
2 cups sugar
6 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

What you do: 

1. Preheat oven to 350 degrees F.
2. Thoroughly mix dry ingredients first (flour, sugar, cocoa powder, baking soda, and salt).
3. Mix in wet ingredients (water, vegetable oil, vinegar, and vanilla). Continue mixing until you obtain an even batter (no lumps).
4. Pour into a cake pan and bake for approximately 40 minutes.
I recommend topping the cake with Chocolate Frosting by Sarah.

SO HOW'D IT GO?

J & W Farm has a similar cake mix that is gluten free & vegan. It takes water, vinegar, vanilla, & oil in addition to the dry mix. Super moist, everyone enjoys it, and great tasting. We use the apple cider vinegar for a better taste. Thanks

I just baked and ate a piece. No frosting the first time. It was easy and quite tasty. The only thing I did differently was use ice water. There was a good chocolate taste, the internal texture was even and slightly fluffy, and the skin was a pleasant contrast to the inside. Next time, I might use 1.25-1.5 times the cocoa powder and I'll add frosting. Hm. Maybe I'll try adding some instant coffee powder or brewed and chilled coffee in place of the water. Oh yeah, I oiled the pan, but didn't flour it.

I have a question. Other than all-purpose flour, what other type of flour can be used? I know nothing about a vegan's diet but is all-purpose flour vegan acceptable? I have a new co-worker whose birthday is 8/30/13 & I want to make him a cake but I want to be sure all-purpose flour is acceptable.

Perfect!  I made a 2 layer cake today with this recipe and it turned out surprisingly good.

I've made this cake many times with a mixture of flours and subbing mint extract for the vanilla. YUM!!! ALWAYS ALWAYS ALWAYS grease and (lightly) flour pans!!
