Easy Stroganoff

What you need: 

1 tablespoon vegetable oil or margarine
1 medium sweet onion
1/2 cup vegetable broth or 1/2 cup water and 2 vegetable bouillon cubes
6 ounces textured soy protein crumbles (I used burger-style crumbles)
1 4-oz. can of sliced mushrooms, drained
onion and/or garlic salt to taste
pepper to taste
1/2 - 1 cup tofu sour cream
2 cups cooked rice or pasta

What you do: 

Heat oil or margarine in a large skillet over medium heat. Slice onion into small, thin slices and saute in oil or margarine until soft. Add broth, textured soy protein crumbles, and mushrooms, and sprinkle with onion and/or garlic salt and pepper to taste. Add tofu sour cream and stir until heated through. Serve hot over cooked rice or pasta.

SO HOW'D IT GO?

This was pretty good.  I used TVP, added some paprika and thyme.  Tasty!

Wow, I have to make this. It's been years since I made the Hamburger Helper Stroganoff and this sounds like it but way better.

This was really good! Here's what I did:
- The 1/2 cup of vegetable broth
- Reserved the liquid from the canned mushrooms, since people mentioned having to add liquid, used a few tablespoons towards the end
- Almost the full 1 cup of tofutti sour cream (I started out with 1/2c. and added more to taste)
- Added 1/8 tsp. of nutmeg (trust me on this)
- Pinch of dill weed and paprika each
- Splash of soy sauce (less than 1/2 tbs.)
- Four minced cloves of garlic, sauteed with the onion
- Lots of salt and pepper

I misread the directions about the textured soy crumbles, so there was a lot more TSP/TVP chunks than desired, unfortunately. I started to pick out noodles but I stopped so that I wouldn't just have soggy TVP leftovers. Rotini noodles were PERFECT in this, next time I'll make this with more noodles. (6-8 oz)

This stroganoff was amazing!  :D  Best stroganoff I have ever had vegan or not. I made it one night then the next night had some friends over and made it again and then my boyfriend begged me to make it again the following day.  Very easy; seems easier then I remember hamburger helper.  I did have some changes though:

Used 1 1/2c water (to make it more saucy)
1 c TVP  (only enough for one serving if any less)
same amount of bouillon cubes
dash of soy sauce like others said
4 cloves garlic
LOTS of fresh mushrooms
so far found macaroni noodles are the best with it but still in search for better.

This was very good. I used fresh mushrooms and garlic. It seemed to be just a tiny bit bland, so I added a tbsp of low sodium tamari soy sauce. Yum!
