Easy Peanut Butter Fudge
2 cups white sugar
2/3 cup apple juice (water works too)
1 cup vegan marshmallow cream
1 cup peanut butter, smooth or crunchy
1 cup semi-sweet chocolate chips
Cook the sugar and juice together over medium heat, stirring until sugar is dissolved, about 2 1/2 minutes.
Add last three ingredients, stir until smooth (I think I do this off of heat).
Pour into greased 9”x9" pan.
Let cool in refrigerator.
Cut into small squares. For thinner pieces pour into 9x13" pan.
Notes: This candy gets very soft outside of the refrigerator. If you don't like too sweet or rich things, this is not for you. My mother and I make these every year for Christmas, little does she know they are "vegan". I also got my Great Grandmother's Molasses cookie recipe from her that needs no substituting, they have always been vegan. I posted that recipe yesterday.

I used whole unsalted cashews that I crushed a bit in a the bag. I dropped all the ingredients in a 9x9 square Pyrex dish and popped it in the microwave for a minute, stirred, and repeated a couple times. Took it out, smoothed it a bit, and put the lid on and refrigerated overnight. My family is gaga over it!
I take `sugar` in these receipes to automatically mean vegan, - but where oh where can I get vegan marshmallow cream? I`m in the U.K. It sound absolutely wonderful! :)>>>
In the U.S., they sell it at Whole Foods, but you can also buy it at any online vegan store, such as Vegan Essentials, Pangea, etc. I don't know if they normally ship to the UK, but I bet if you contacted them, they'd do it for you. :-)

white sugar is most likely not vegan, try organic or saw sugar, but be sure to melt it thoroughly :)
