Easy Chocolate Pudding
1 14 oz can coconut milk
1 cup + 1/3 cup soy milk or Creamer
1 cup sugar
1/2 cup arrowroot powder
1/2 cup cocoa powder
1 teaspoon vanilla extract
1 teaspoon chocolate extract (optional)

Mix arrowroot powder vanilla and chocolate extracts into 1/3 cup soymilk to make a slurry and set aside. Place coconut milk, sugar, cocoa and 1 cup soy milk in a sauce pan on medium heat and bring to a boil, stirring often to prevent lumps.
As soon as it begins to boil, remove from heat. Pour in the arrowroot slurry and stir vigorously. The mixture will begin to thicken immediately. Pour into dessert cups and refrigerate to cool and thicken even more.
Serve when completely cooled.
SO HOW'D IT GO?
Ingredient Substitutions says you can sub cornstarch one for one. that's what I'm going to do. hopefully it's right.

what if you dont have arrowroot, can you use dutch gel, or cornstarch, or surgel?
