Easy Apple Butter
10 crisp apples (such as Granny Smith, Macintosh, or Spartan)
1 cup of vegan brown sugar (raw sugars work great here)
1/2 cup of apple juice (or water)
1/4 teaspoon each cinnamon, nutmeg, allspice, and cloves
1 teaspoon vanilla extract or 1/2 teaspoon each of cinnamon and nutmeg
1. Core and cut apples into quarters. If you have a food processor or blender, leave the peels on. If you are working by hand, peel the apples.
2. Place all ingredients in a large pot and cook on medium-high heat until apples break down and become very soft.
3. Continue to reduce until the apples are thick and dark brown and the liquid has reduced about 80%.
4. Cool mixture slightly and puree in a food processor, blender, or with an immersion blender. If you are working by hand, blend with a potato masher until the apples are the consistency of a thick apple sauce.
This apple butter is great spread on toast, rice cakes, on top of "ice cream", as a dip, mixed with yogurt, or anything else you can think of!
Keeps two weeks in the refrigerator. Freezes well.
SO HOW'D IT GO?
This is a wonerful recipe! Just came off the stove and everything from scent to flavor is delicious ;)b . I do have to say though that if your doing everything from scratch you will most likley need more apple juice than the recipe states. I quartered it and still needed over a quarter of a cup to get the apples soft without burning them dry. No big deal just thought it should be noted :). Oh i also added al ittle more of the spices since i tend to like it strong, other than those wouldnt change a thing! I really look forward to making the full recipe and freezing it to give as gifts when family stops by :)>>> .
P.S. I made this with the skin on from finely diced apples since i like the extra chunky bits ;) .
So I have been meaning to make my own apple butter for years now. Always figured it would be a pretty quick and simple recipe, but I just never got around to it, til today. THIS WAS FANTASTIC! I will never get store-bought apple butter. I'm going to make tons of this and give them out to friends and family this Christmas.
This was yummy and it was easy besides the fact that i hand did everything..but it was worth it and my dad loved every bit of it. I'll definanetly be making this again for my neighbors
This was really good, especially if you like pumpkin pie spices, and I do! It took me about 1h30 to cook, but I think its because i forgot to take the lid off!! Anyways everybody likes it!!!thank you!
