Easy and Tasty Ratatouille

What you need: 

1 large green pepper (or 2 medium)
1 large onion
1 large zucchini
1 can of stewed tomatoes
salt and pepper (to your own taste)
a dash of paprika
2-3 tablespoon margarine

What you do: 

Melt margarine in a large pot. Slice all vegetables and put in pot, get the margarine on em good then add stewed tomatoes and salt, pepper and paprika. Allow to simmer for 15-20 minutes, depending on how crunchy you like the veggies!

SO HOW'D IT GO?

With some whole wheat toast and a green salad, this made a really satisfying meal, and was just as good the second day.  I traded the margarine for olive oil, and added a teaspoon of Herbs de Provence per others' suggestions.  Also hot sauce, because I just couldn't leave it French, apparently.  Pretty tasty!

It didn't come out as saucy as I was expecting, I used a 15 ounce can of tomatoes.  Maybe a bigger can next time?

I added garlic  - made a huge difference. I served it over the store-bought Casbah Lemon-Spinach Cous Cous (towhich I added a can of garbanzo beans). My non-veg boyfriend (very critical!) loved it! Will definitely make this again!

I added garlic powder and herbs de provence. YUM.

my family made some quite similar to this the other day. the only difference was that we fried them in olive oil, no margarine, added an eggplant (my mom and brother's first time trying it and they loved it!), and topped it off with nutritional yeast flakes. yum :) it doesn't even need the NY flakes. I thought it was a dish that needed to be served over something, like rice, but it was fantastic all on its own :)

just like it should be!
i added 1 t mustard and 2 t balsamic vinegar. herbes de provence is a must here.  ^-^
