Dill Pasta Salad

What you need: 

1/2 of a large cucumber (sliced thinly)
1 large tomato (diced)
as much dried or fresh dill as you like
2-3 tablespoons vegan mayonnaise of choice
1 cup cooked bow-tie pasta (cooled)
3 small dill pickles (finely diced)
a little bit of Tabasco
1 teaspoon garlic powder
apple cider vinegar
olive oil (optional)
salt and pepper to taste

What you do: 

Mix all the ingredients except the cider vinegar and olive oil.
Then add as much oil and vinegar as needed to make the salad smooth.

SO HOW'D IT GO?

Really enjoyed this even though I made it without the pickles! We'd gotten a ton of dill and cucumber in our farm share, and I had no idea what to do with since we didn't want to pickle the cucumbers. This recipe was perfect! I'm not even usually a huge cuke fan, but this worked really well.

Like in the photo, we used gemelli (maybe that's rotini though? I can never tell...) rather than bowties for the pasta. Worked well to sop up the sauce without being overwhelming. Great summer dish when you don't feel like eating something hot!

Made this today after a search for "dill" - Super good salad and what a fun blend of flavors. LOVE it and highly recommend when fresh dill is around. I left out the ACV and oil and it was super creamy anyway. I doubled it and am adding a bit more pasta as it is VERY creamy!! Yum.

This was gorgeous!  I didn't have dill, but used some pickle juice rather than the olive oil and vinegar. I added some celery salt and Vegit to kick up the flavor.  I used one red and one yellow tomato, and added a can of rinsed drained dark kidney beans, to round it out as a meal.  I used rice pasta because I have to be gluten free.  I never thought I'd find a homemade pasta salad to rival the memories of the stuff in the boxes, but this is better than any box I can ever remember eating.

Vundevah!! Absolutely DEEEElicious! Very unique with a perfect balance of flavors. Suggestion: Leave out the oil and apple-cider vinegar, in my opinion they ruin it. I didn't have dill pickles, so I added some liquid from the dill pickle jar (I always save it) and it worked out nicely. I used a healthy ammount of dill weed.If you're making this for more than one or two people, double the recipe..believe me, it will go fast! I'll be making this ALOT!!
