Greek Pasta Salad

What you need: 

1/4 cup oil
1/4 cup vinegar
1 tablespoon dried oregano
1 tablespoon dried parsley
1 clove minced garlic
1/2 tablespoon salt
1/4 tablespoon pepper
1/2 (16-ounce) box dry rotini pasta, cooked, drained, and cooled
1 cucumber, diced
1/2 cup ripe pitted olives, halved
1/2 cup sliced green onions
tomato wedges (optional)
vegan feta cheese (optional)

What you do: 

1. In a bowl, combine oil, vinegar, oregano, parsley, garlic, salt, and pepper; thoroughly whisk.
2. Add pasta; toss to combine.
3. Add cucumbers, olives, and green onions; thoroughly toss.
4. Chill. Serve with tomato wedges and vegan feta.
