Curry Rice
What you need:
2 cups rice
4 cups water
3/4 cup sliced baby carrots (about 20)
3/4 cup frozen peas
2 tablespoons garam masala (or) - 1 tablespoon curry, 1/2 tablespoon cumin and 1/2
tablespoon coriander
1small onion, diced
1 tablespoon vegetable oil
1 teaspoon salt
fresh ground black pepper
What you do:
Warm oil in skillet. Add onion and sauté until clear. Add garam masala or curry/cumin/coriander mix and continue to heat a minute or two.
I use a rice cooker so at this point I just mix all the ingredients together in the cooker, but if you do not have one, just cook the rice as recommended, adding other ingredients to the water with the rice.

Trader Joes sells frozen cooked organic brown rice that you steam in the microwave for 3 mins (or can heat in an oiled pan) for a few mins. I'm going to use that rice.
I was feeling really lazy so I didn't chop up the onion I just used a tsp of onion powder... overall this was pretty good.
So the veggies cook with the rice? B/c I like to use brown rice and my rice cooker takes about 2 hrs to cook it... so i was wondering if after i warm them i put them in with that and let it cook with the rice the whole time... Respond soon b/c i really want to try this! sounds delicious
maybe throw your veggies into your rice mixture when the rice is 1/2 way done, or later, depending in how firm you want them to be.

I love this recipe. I just throw whatever frozen veggies I have on hand as well as any fresh veggies I have into the rice cooker with the rice. Most of the times I've made this, I haven't had any onions, so I just put a bunch of onion powder in along with the curry and cumin, and it still tasted awesome. The family loves when I make this, too. Makes great leftovers. Thanks for the recipe. :)
