Curry Miso Wheat Berry Salad

What you need: 

2 cups cooked wheat berries (about 1 cup dried wheat berries)
2 tablespoons flax oil (or oil of choice)
3 tablespoons apple cider vinegar
1 teaspoon yellow curry powder
1 tablespoon miso
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro leaves
2 green onions, trimmed and sliced

What you do: 

1. Cook the wheat berries as per directions; I use 1 cup grain to 2 1/2 cups water, heat until boiling and then reduce heat to low, cover and steam 1 hour or until water has evaporated. Chill if desired.
2. Whisk the oil, vinegar, curry powder, and miso together and add to the wheat berries.
3. Add fresh herbs and green onion and mix until all is well coated. Serve right away or let chill until it becomes cold.
Source of recipe: I love wheat berries (soft wheat grains) in salads. They have a great taste and a nice chewy texture. This salad has a fresh and savory flavor. You can serve it warm or cold.
