Cucumber Salad

What you need: 

2 English cucumbers, thinly sliced
2 serrano chiles or jalapeños peppers, sliced
1 bunch mint leaves, torn into pieces
1 to 2 tablespoons sugar, to taste
rice vinegar, to taste

What you do: 

1. In a bowl, combine cucumbers, chiles, and mint.
2. Sprinkle the sugar and cover with enough vinegar to coat salad; toss to combine.
3. Let sit for about 30 minutes.

SO HOW'D IT GO?

i made this for a potluck.. all I added was a small can of crushed pineapple and alfalfa sprouts and i think i used spicy red anaheim peppers instead of serrano.. i also spinkled a little salt on it..

it was really good that night at the potluck but got really juicy after a couple days.. i had to drain it on like the 2nd day cuz all the water came out of the cucumbers and diluted the yummy dressing
