Cucumber Hummus Sandwich

What you need: 

2 slices bread
Dijon mustard, to taste
leaf lettuce, to taste
1/2 cup hummus
cucumber, thinly sliced, to taste
1 tomato, sliced
1 teaspoon balsamic vinegar
1 teaspoon vegan parmesan cheese, grated

What you do: 

1. Spread both slices of vegan bread with dijon mustard. Place lettuce on one slice of vegan bread.
2. Spread the hummus on the lettuce. (This prevents the vegan bread from getting soggy if you take the sandwich to work)
3. Lay the cucumber slices on top of the hummus and the tomato slices on top of the cucumber.
4. Drizzle the balsamic vinegar over the tomatoes. Sprinkle the parmesan cheese over all. Close the sandwich, cut in half, and enjoy.

SO HOW'D IT GO?

I had a similar sandwich at Panera, and had to make my own. This was so yummy! I made my own hummus, substituted feta cheese for the parmesan, used spinach leaves and red onion. Your breath will need some recovery time with the garlic and onion!  :D

I thought this was delicious!  In the future I may add some sliced onion, feta or sprouts.  btw - I am a meat eater that loves veggies.
