Crumbles, Pasta and Cheese Mix (Kid-Friendly, Too!)

What you need: 

3/4- 1 lb dry pasta (your favourite. I like eggless ribbon pasta for this)
several teaspoons tomato paste
1 small onion, diced or minced
1 package vegan "meat" crumbles OR about 1 1/2 cups chopped seitan
1 cup Dragonfly's Bulk Cheese Mix
dissolved in 2 cups hot water
olive oil or Earth Balance margarine for light sautéing

What you do: 

*This recipe uses 1 cup of Dragonfly's Bulk Cheese mix. I suggest making 1/2 the recipe for the cheese mix. It takes about 5 minutes to make and is very versatile. I know it's a recipe-in-a-recipe but it's really easy!
Saute chopped onion in a small amount of olive oil in a nonstick pan for about 2-3 minutes.
Add veggie crumbles or seitan and saute until done.
Add cheese mix dissolved in water and stir over medium heat until slightly thickened.
Add the several teaspoon tomato paste to taste. I probably ended up using about 2 tablespoons but go a little at a time so each bit can dissolve properly.
While this is cooking, cook pasta, drain and reserve pasta water.
In a large bowl stir pasta and cheesy mixture together. Add pasta water 1 tablespoon at a time to thin cheesy mixture.
Serve with a healthy green vegetable! This recipe happily fed several omnis.
