Creamy Sweet Potato Soup

What you need: 

1/2 cup chopped sweet potato
1 cup chopped apple
1/2 cup soy milk (I used vanilla)
1 tablespoon almond butter
cinnamon

What you do: 

Boil sweet potato in water until almost tender and then add apple for a few minutes. Simmer for 2-3 minutes.
Scoop potato and apple into blender, reserving some of the water. Add soymilk and almond butter to blend and mix.
Add pureed mixture back to pot with desired amount of reserved liquid (depending on how thick you want it). Add cinnamon and heat through.
(I don't add all the potato and apple in the blender because I like "chunks" in my soup).
I have made this before, but tonight when I added the almond butter, it MADE the dish :) Enjoy!
