Creamy & Super Easy Coleslaw

What you need: 

2/3 cup vegan mayonnaise
2-1/2 tablespoons sugar
2 tablespoons vegetable oil
2 tablespoons white vinegar
1/2 teaspoon celery salt
1/4 teaspoon salt
8 to 9 cups multicolor coleslaw mix (red cabbage, green cabbage, and carrots)

What you do: 

1. Dressing: In a bowl, combine vegan mayonnaise, sugar, vegetable oil, vinegar, celery salt, and salt; whisk until smooth.
2. Salad: Place 8 cups coleslaw mix in another bowl.
3. Pour the dressing over the salad; toss to combine. Add an additional 1 cup coleslaw mix if you want the slaw to be less creamy.
4. Eat immediately or chill before serving.
Source of recipe: Got this idea from the web somewhere... veganized it of course... and changed it up a bit.

Yum. It went perfectly with my pulled bbq chik'n shreds!

I really like this recipe. Pre-vegan, I used Hidden Valley slaw dressing, and this is as good or better.
I also eliminated the oil, used stevia instead of sugar and added poppy seeds for looks. Thanks for sharing!  ;)b

:) I'm on a cole slaw kick. Your recipe is wonderful but I eliminated both the salts and the oil. I use rice vinegar, sugar and Vegenaise. All to taste. I use the premixed cole slaws. Yum.

YUM - VERY good recipe and very easy!

I added about 3/4 cup of slivered almonds and a shake of sesame seeds for some 'crunch'
