Creamy, Rich, Hot Cocoa

What you need: 

1/2 cup unsweetened baking cocoa
1/2 cup vegan sugar
1/2 cup water
1/4 teaspoon salt
4 cups nondairy milk
3/4 teaspoon vanilla extract

What you do: 

1) Put cocoa, vegan sugar, water, and salt in a medium saucepan over medium heat. Stir until dissolved, about 3 minutes. Add nondairy milk and stir constantly until piping hot, about 3 to 5 minutes. Add vanilla extract. Serve in coffee mugs. Great with a shake of ground cinnamon and/or a vegan non-dairy whipped topping.

SO HOW'D IT GO?

This was really good.  I used raw sugar, rice milk, added a touch of mint, and did it all in my VitaMix. As you can see from the photo above, it was a hit with the kids!!

This is so delicious and has gotten many accolades from my non-vegan friends.  It's one of those recipes that really makes 'em think twice!  I find it works better with soy or almond milk, making the drink more thick and rich.  For a single, but generous serving decrease the measurements by a fourth (divide all measurements by a 4).  This drink is more than highly recommended; it's a must!

It's still cold and snowy in Maine, and this hot cocoa totally hit the spot today when I got home from work =D

I really liked the addition of a sprinkle of cinnamon.  I've never done that before, and now I'm hooked for life!

for a smaller serving but still a great recipe, try the piping hot cocoa one! it makes about a cup worth.
