Creamy Mushroom Soup

What you need: 

1 8-oz can vegetable broth
2 oz porcini mushrooms
8 oz shiitakes, sliced
8 oz baby bella mushrooms, sliced
1 onion, chopped
1 cup unsweetened soy milk
4 teaspoons whole wheat flour
minced garlic
dried thyme
salt
pepper
olive oil

What you do: 

Pour about a cup of boiling water over dried porcini and let sit for 20 mins or so. Drain liquid and reserve; copped porcini and set aside.
In a large soup pot, heat olive oil over medium heat and sauté onion until translucent. Add chopped mushrooms (including porcini) and sauté until soft. Add flour, stirring quickly to coat. Whisk in broth, porcini liquid, and soy milk. Let simmer, adding water or broth as needed. Puree soup in batches, and season with thyme, salt, and pepper.

SO HOW'D IT GO?

I made this to go into my veganized string bean casserole for thanksvegan day dinner, but it's so delicious, I'm going to save some to serve on its own.  I only used shitakes, plus my homemade boulion mix (All Season Blend for the Uncheese Cookbook), and it worked out lovely.

Easy and quick to make, the thyme and black pepper flavors were nice. I used white mushrooms from the market, no idea what kind they were (though I was in a rush and skipped a few steps, I didn't sautee anything, just sort of mixed the mushrooms and onions in the vegetable chopper beforehand and then added them on the stovetop to the vegetable broth--next time I will make this properly, according to instructions) I think spinach might be good here, might put some in next time. Also wondering, when are you supposed to add the minced garlic, maybe during the sauteeing-onions part?

is the flour really important? or can i leave it out?

i think the flour is a thickener..you could try making a cornstarch and water slurry type thing and adding that...id look up the amounts for the substitution though.

the color is horrible but the taste is excellent. i didn't have all those fancy mushrooms, just used white button and some dehydrated black fungus.
