Creamy Basil Dressing

What you need: 

1 cup loosely packed fresh basil
1 1/2 tablespoons chopped shallot
2 tablespoons balsamic vinegar
3/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons Vegenaise
6 tablespoons olive oil

What you do: 

Blend all ingredients in a blender or food processor until smooth.

I made a lowfat version of this subbing in tofu for the vegan mayo/olive and lemon juice for the balsamic vinegar, it came out well. I have it in the fridge till tomorrow for a brunch salad, so flavors should blend a bit more by then too. Will be making this again, and maybe I'll try adding in some other spices next time as well for a bit of variety Smile
