Creamed Spinach Soup

What you need: 

1 pound frozen spinach, thawed
1/2 small onion, finely chopped
2 cloves garlic, chopped 
2 tablespoons olive oil
2 tablespoons flour (I use gluten-free)
1 cup milk substitute of your choice ( I prefer almond milk)
2 tablespoons nutritional yeast (more or less for taste)
1/2 teaspoon salt, or to taste
Dash of nutmeg (optional)

What you do: 

1. Heat the oil in a sauce pan, and add onion and garlic cooking over low heat, stirring until softened.

2. Add flour, stirring constantly until a paste is formed (about 1-2 minutes).
3. Remove from heat and add the milk substitute. Stir well and then return to heat.
4. Bring to a boil and then simmer and cook for 3-4 minutes, stirring often.
5. Mix in the nutritional yeast, salt, and nutmeg (if using).
6. Stir thawed frozen spinach and heat until well-combined. Enjoy!
