Cranberry Salad

What you need: 

1 pound fresh cranberries
2 (6 ounce) cans mandarin orange slices, drained
1 (20 ounce) can crushed pineapple
1 cup sugar
1 cup nuts, chopped, optional
2-3 cups vegan whipped cream (I use http://vegweb.com/index.php?topic=11433.0)

What you do: 

1. Grind cranberries in food processor or blender. Add mandarins, pineapple, nuts, and sugar.
2. Let set overnight to blend flavors.
3. Just before serving fold in whipped cream. Garnish with additional whipped cream if desired.

SO HOW'D IT GO?

I'm giving this recipe 5 stars - but only for being combined with the coconut whipped topping.

I'm in love with the combined recipes!!! It reminds me of ambrosia salad..... SOOOOOO GOOOOOD! I didn't go by the measurements listed because 1lb of cranberries is a lot and I only had one small package and some frozen fresh pineapple chunks so I went with that and added one can of mandarian oranges.  I also used raw agave nectar as my sugar. It came out more soupy than  I expected but didn't matter because it's so freakin' good!

I recommend everyone to try this!  ;)b
