Cranberry Bread

What you need: 

1 cup unbleached white flour
1 cup whole wheat pastry flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup chopped and toasted walnuts
1/4 cup canola oil
1/2 cup sweetener
1 cup cranberry sauce (boil 12 oz cranberries, 1 cup sucanat, 1 cup water for 10 min let cool then refrigerate for a bit)
3 tablespoon soy or rice milk

What you do: 

Preheat Oven to 350 degrees F. Sift together the flour, baking powder and baking soda (also sweetener if dry like vegan sugar). Add walnuts to this mixture. Cream the oil, and sweetener (if a liquid like barley malt) until well blended. Beat into oil mixture 1 cup cranberry sauce then add the soymilk to it. Stir the wet mixture into the four mixture until mixed. Pour dough into an oiled bread pan and bake 45-50 minutes.
