Clean-out-the-fridge Pilaf
What you need:
2 cup brown basmati rice
4 cup water
1/3 lb mushrooms, chopped
1/2 of a green pepper, diced
1/2 of a red pepper, diced
1 onion, chopped
2 plum tomatos, chopped
salt to taste
What you do:
Throw everything in a pot, bring to a boil, cover and simmer for 45 minutes until the rice is cooked.

so great! put whatever veggies you have to get rid of! yumm and easy, too. great lazy dinner night dish. veggie broth is great instead of water, too, if you've got it.
