Classic Blondies (vegan version)

What you need: 

1 cup flour
1 teaspoon baking powder
3/4 cup walnuts, coarsely chopped (optional)
3/4 cup chips, vegan chocolate or vegan white chocolate (or both ; ))

1 cup brown sugar, packed
6 tablespoons vegan margarine
1/4 cup vegan mayonnaise (e.g., Vegenaise)
2 teaspoons soy milk
2 teaspoons vanilla extract

What you do: 

Inspired by ChefLindsay, kudos!
Pre-heat oven to 350 degrees F. grease, well, a 8x8" baking pan. mix together flour and baking powder (if using nuts or chips, mix in now).
In a medium sauce pan, melt margarine and sugar, whisk until combined well. mix in soy, vegan mayo, and vanilla, and whisk well.
Then, continue mixing warm mixture until it cools (if you can stand to put your finger, its cool enough) then slowly add the dry mixture, whisk until smooth.
Pour evenly into pan. Bake for about 35 minuets, or until a skewer comes out clean.
Allow the blondies to cool completely before cutting (the fridge speeds up the process). enjoy!
