Cinnamon Raisin Bread

What you need: 

7/8 cup water
2 tablespoons canola oil
1 teaspoon lemon juice
1 1/2 teaspoons salt
2 1/2 tablespoons brown sugar
1 1/2 tablespoons powdered soy milk (do not add water)
3 cups bread flour
1 3/4 teaspoons active dry yeast
2 teaspoons cinnamon
1 cup loosely packed raisins

What you do: 

1. Place ingredients in bread machine pan in the order listed.
2. Set machine to the sweet bake setting, according to manufacturer's directions.
3. It should take around 3 hours and 40 minutes for machine to finish the cycle.
It smells so good. I set the timer on my machine so it starts in the middle of the night and is finished around the time of when I am waking up. The smell can raise even the heaviest of sleepers. Enjoy!

Could I substitute a different flour for bread flour?  I feel silly having 5 kinds of flour in a one-person apartment.  Could I sub whole wheat all-purpose?


Are you supposed to add the raisins in right at the very start or do you have to wait for the beep mip-cycle to add them?  That might be a dumb question but I am new to bread machines!
