The use of predominantly white flour ensures a good rise, addition of the wheat-germ gives the wheat look and flavour, and the vitamin Q10. If you want to leave out the vegan sugar, that's fine, the vegan bread will rise slightly less, and be a little paler.
SO HOW'D IT GO?
This bread had a nice nutty flavor. I also had to add extra wholewheat flour (I used stone ground) and I added a Tbsp. of vital wheat gluten and a Tbsp. of EVOO (makes it moister IMO). Very good....I will certainly make this again.
Nice flavor, and crunch from the seeds added. However, I had to add an extra 3/4 C of whole wheat flour. And I think that the bread would have turned out better with bread flour instead of all purpose. Or if you use all purpose, I think you should add maybe 1 Tbs of vital wheat gluten. Other than that, awesome bread!
