Chocolate Covered Peanut Butter Crackers

What you need: 

80 buttery round crackers, check ingredients (I like Trader Joe's)
2/3 cup creamy peanut butter
1 lb good melting dark chocolate

What you do: 

Prepare the cracker sandwiches by spreading about a teaspoon of peanut butter on one cracker and pressing on another cracker.
In a double boiler over low heat, melt the chocolate. If using bar chocolate, break into small pieces first to make it melt faster.
Cover a large cookie sheet with wax paper and place close to the stove.
Dip each cracker sandwich in the chocolate one at a time and allow the excess to drip back into the bowl.
Place each sandwich on wax paper to cool. Allow to cool at room temperature or pop in the fridge for 15 minutes.
Store in an airtight container.
These freeze well too!
