Chocolate Cake

What you need: 

1 1/2 cup flour
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water (or ice coffee)
2 teaspoon vanilla extract
2 teaspoon vinegar

What you do: 

Preheat oven 375. Use small brownie size pan (no greasing required). Mix all dry ingredients right in pan. Mix all wet ingredients in separate bowl EXCEPT VINEGAR (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add vinegar quickly and stir in--immediately put in oven and bake for 25 to 30 min. Cool and then consume!
***OPTIONAL: after you add the vinegar, you can put some frozen
cherries, raspberries or cranberries on top of the batter (or you
can mix them in beforehand)
as far as icing goes--you can make vegan icing with cocoa and
powdered vegan sugar--sorry, i don't have a recipe. but it tastes good
without icing also.

SO HOW'D IT GO?

This is very easy to make and I always have the ingredients on hand. I fold in some strawberries in the cake and then I put vegan butter cream icing on top.

Made this for my birthday and it was soooo good only half the cake made it to the party!

*Made it with this vanilla frosting http://vegweb.com/index.php?topic=6441.0
*Mixed dry ingredients in 1 bowl, wet in 1 bowl, combined, added vinegar, and put in greased pan. GREASE the pan and DO NOT mix in the pan.
*Added a handful of carob chips halfway through baking (so they wouldn't just sink to the bottom) and accidently slammed the door so the cake sunk. This actually ended up beautifully- it made the cake so dense it was like a brownie/cake hybrid. I'm doing it on purpose next time.

Thanks for the photo it looks sooo sweet! I was wondering if you doubled the recipie? Or if it really does poof that big?  :P

SO, I made it again, and folded in frozen raspberries - OMG - it is fabulous!
Added such a nice flavour to it - we can smell it all through the house - I had to stop after one piece so that my hubby will get some when he gets home :-)

It's be awhile since I've made a cake,  so I thought I needed a fix. Instead of sugar I used raw honey,used coconut oil, I'm not much on too much sweets nowasays. I needed to cut back on the sugar issue. Just don't crave it as much. So this worked out very well.

in my second attempt i doubled it and it came out even better!!! and looks amazing :)

This is a good recipe. My cake came out very good. A little rich though. I wouldn't use so much cocoa powder next time but this is a good base for chocolate cake. I frosted it with vegan "buttercream" frosting, drizzled chocolate sauce over it and topped it with some cherries which was an absolute dream. Thanks for posting!

This recipe is great - I have made it twice with two different variations and both have been fabulous!

Both:
3/4 cup spelt flour and 3/4 cup rye flour instead of wheat
1/4 cup brown sugar only
just under 1/2 cup unsweetened applesauce and 3 tablespoons oil  instead of the full amount of oil
Apple cider vinegar as my vinegar
1 tsp cinnamon
Sprinkled the top with a maple sugar popcorn sprinkle powder

#1 - carob powder instead of cocoa - worked just fine - lighter tasting

#2 - No cocoa/carob at all
Sprinkled with coconut along with the maple powder

LIght fluffy and mmm good!

This is by far THE best chocolate cake i've ever made. Actually, this is the only chocolate cake that i've made that's been better than "on the verge of being edible." :D I used white whole wheat flour, orange flavored stevia, added a bit of orange zest, and have no idea how much cocoa i used- just dumped in what i had left (i think it was more than what the recipe called for). It turned out absolutely wonderful! Thanks for the recipe!
