Chocolate Cake

What you need: 

1 1/2 cup flour
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water (or ice coffee)
2 teaspoon vanilla extract
2 teaspoon vinegar

What you do: 

Preheat oven 375. Use small brownie size pan (no greasing required). Mix all dry ingredients right in pan. Mix all wet ingredients in separate bowl EXCEPT VINEGAR (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add vinegar quickly and stir in--immediately put in oven and bake for 25 to 30 min. Cool and then consume!
***OPTIONAL: after you add the vinegar, you can put some frozen
cherries, raspberries or cranberries on top of the batter (or you
can mix them in beforehand)
as far as icing goes--you can make vegan icing with cocoa and
powdered vegan sugar--sorry, i don't have a recipe. but it tastes good
without icing also.

SO HOW'D IT GO?

This is one of my favorite cake recipes. I've been making it for several years now and you would never know it's vegan.

I love this recipe for cupcakes!  I add a bit more cocoa powder than called for (because I love chocolate!) and use about 1/3 whole wheat 2/3 white flour because it's a bit healthier that way.  I love the texture of these.

This is a nice cake, very basic and easy, but I wasn't overly impressed.  Next time I'll try something that uses tofu and maybe some melted chocolate instead of cocoa, for a richer taste.

I frosted this with peanut butter and jelly and it was delicious.  :P

I've been making a version of this recipe of late that I absolutely love. It takes no time at all, uses only basic ingredients, and is so GOOD!

1 1/2 c flour
1 c sugar
1/4 c cocoa
1 t. baking soda
1/2 t. salt
1/3 c oil
1 t vanilla
1 t vinegar
1 c. water
Preheat oven to 350. Mix all dry. Add wet. Add to greased cake pan. Bake 30-45 minutes. For the size pan I use, it takes about 35-40 minutes.
The person who gave me this recipe said you can make muffins/cupcakes baking for 22 min, but I've never tried.

I also use a very simple glaze. 1 c confectioners sugar, 1 T oil, 2 T cocoa, and enough hot water to reach the consistency you want (about 2 T). Drizzle/spread over cooled cake.

i'm not a vegan, but this cake is AMAZING!! absolutely LOOOOVVED it. i made it for my boyfriend and he could not believe how good it was. i usually add some maple syrup and (vegan) dark chocolate chips, mmmm!!!

AMAZING, My family is vegetarian and my kids thought it was great that they could lick the bowl clean because of no eggs in the batter.. These are going to be a new family fav!! ;D

i also doubled this recipe for a larger bday cake, and it came out GREAT!!  everyone was so impressed and couldnt believe it was vegan!  THANK YOU!
