Chinese Fried Rice

What you need: 

1 lb. cooked rice, well drained and dried. (I use Uncle Bens serving size 6).
3 tablespoon oil
1 tablespoon soy sauce or tamari
2 oz. cooked peas
2 green onions, thinly sliced
dash of sesame oil
salt & pepper
* optional (6 mushrooms sliced slightly thick)
* optional (1 bib of celery, sliced thin)

What you do: 

Heat a wok and add the oil.
Saute the mushrooms and/or celery
Add soy sauce (or tamari)
Add the cooked rice and peas and stir
Allow to cook for about 3 minutes, stiring continuously.
Add seasonings and sesame oil.
Add green onions
Serve with additional soy sauce if desired.

SO HOW'D IT GO?

Great!  I'm guessing this will turn into another go-to recipe when I'm short on time.  For dinner the other day I added celery, cashews, and some pre-grilled tofu and it was excellent!

One thing that can make fried rice even better is mirin (sweet cooking wine).  I always put a ratio of 4:1 or 6:1 of mirin:soy sauce (yes, more mirin than soy sauce--soy sauce is stronger). ;)b

That's totally what I made mine with! Also, mine ended up not needing anything.  Dunno why I thought it would need onion powder when it had so much onion in it already...

But yeah, those two dishes go really well together.

made mine with the green onion, celery, shredded carrot, mushroom, peas, and a bit of red bell pepper. so great!

great recipe!  ;)b Added a bit more soy sauce for flavor. Gonna make general Sao's Tofu tomorrow so this will be a perfect side dish
