Chickpea Salad Sandwich

What you need: 

2 slices whole wheat bread
chickpeas
mustard
soy mayonnaise
pickle relish
vegan soy cheese, optional
lettuce, optional- i like the spring greens mix
tomato slices, optional
fresh ground pepper

What you do: 

When I became vegetarian, i missed the weirdest things, and one of those things was chicken and tuna salad sandwiches. This is a good substitute, because with the mustard, mayonnaise, and relish, you can hardly tell what the main ingredient is anyway. Non-vegetarians will like it too!
Put the chickpeas, mustard, mayonnaise, and pickle relish (or whatever you would typically make meat salads with) in a bowl and mash with a fork into a lumpy consistency (should have texture, not smooth like hummous). Put cheese on one slice of vegan bread spoon chickpea salad over it. Top with lettuce and tomato slices and add pepper to taste. Put other slice of bread on top to close sandwich and slice in half from corner to corner. Yummy... enjoy! ;)

SO HOW'D IT GO?

This recipe is a snack made in heaven!  Just be careful on the portions of the mayo, relish, and mustard (or any other condiment you put in it).  I'm not the best cook in the kitchen and used too much mayo and mustard and salad got a little smooth rather than firm.  I just added bread crumbs to absorb some of the liquid and it went back to something I can put on bread and make a sandwich.  I also added fresh chives and dill to mine.  Thank you for sharing this great recipe!

I loved this!  I made a batch to take to school.  The things that I did a little different was this I added a little cumin to the mix.

O.K., so the first time I made this, I mashed it with a fork, and I just wasn't crazy about the texture.  SO, I thought I would take another stab at it, and I put everything in my food processor...I didn't make it "creamy", I just made it less chunky, and it was EXCELLENT!  Will definitely be eating a lot of these, now.  ;)b

Dude- AWESOME! This tastes just like the tuna sandwiches I used to eat at Panera, but WAY better! I topped it with a slice of tomato and some alfalfa sprouts, and put it on some ezekiel bread and it was yummilicious!! :D

Holy cow. I made this using the amounts that Ksuhr specified above and it was amazing. I also used a potato masher instead of a fork, I found using  a fork to be too difficult. It's really amazing, it even has the same consistency as tuna fish. I didn't even bother with bread, I ate it out of a bowl!!

wow, this is delicious. i used vegenaise, mustard, nutritional yeast, pepper, a lil bit of apple cider vinegar, and a sprinkle of pickle juice since i'm gross and didn't have relish.

i miss sandwiches that aren't hummus so much. this and eggless egg salad make me so happy. i especially like this because chickpeas are great, and aren't tofu!
