'Cheezy' Puffs

What you need: 

4 cups unbleached white flour
1 tablespoon light brown sugar
1 1/3 cups warm water
1 1/2 teaspoons sea salt
1 1/2 teaspoons olive oil
2 teaspoons dry active yeast
2 tablespoons cornmeal
3/4 cups nutritional yeast
1 1/2 cups vegan butter

What you do: 

1) Place flour, brown sugar, warm water, salt, olive oil and yeast in the bread machine and select the dough cycle. Once processed, deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, fill your shallow baking pan with water and place it in the oven, preheat oven to 375 degrees Fahrenheit.
2) Brush the risen loaves with olive oil and generously sprinkle the loaves with nutritional yeast. Put the loaves into a bread pan and place in the oven. Bake loaves for 30 minutes. I recommend that after the first 3 minutes of baking to spritz the loaves with water, wait 3 minutes, spritz again, wait another 3 minutes spritz again, then allow baking for the time remaining. Removes the loaves and allow to cool. Be sure to remove the shallow baking pan. Turn the oven up to 400 degrees Fahrenheit.
3) Cut the loaves into 1/4 inch thick slices (like you would cut bread) and toast each piece in the toaster. Cut the the pieces into 1/4 inch thick sticks. Heat a large pan on medium heat and melt the vegan butter. Once melted, use it to coat your sticks. Put nutritional yeast in a large mixing bowl and put the margarine coated sticks into the yeast coating each stick well. Align the sticks on a baking sheet and bake sticks for 15 minutes. Remove the sticks and allow them to cool on the baking sheet.
4) Place into a serving bowl and devour, sharing is optional ;)
