Cheesy Grits with Peppers

What you need: 

1 cup water
1/4 cup dry grits (makes approx. 1 1/5 cup cooked)
1/4 cup roasted red peppers or fresh red peppers, diced
1 1/2 teaspoons olive oil
2 tablespoons nutritional yeast
1 teaspoon garlic powder
salt and pepper, to taste

What you do: 

1. Boil 1 cup water on the stove. Once the water boils, add grits and reduce the heat.
2. Stir occasionally so that the grits don't burn. Cook approximately 3 minutes, or until most of the water is cooked away (this prevents runny grits!).
3. Pour into bowl and add the peppers, olive oil, garlic powder, nutritional yeast, salt, and pepper to taste. Mix it up and enjoy.
Delicious, nutritious, and easy to make!

SO HOW'D IT GO?

Wonderful. I use a slightly lower water-to-grit ratio, maybe because I'm starting with polenta rather than real grits.

Don't forget to sprinkle on some hot pepper flakes  ;)b
