Cauliflower Poppers

What you need: 

1 large head cauliflower, chopped to florets
juice of 1 lemon
3 cloves garlic, minced
2 teaspoons Dijon mustard
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon dried dill
fresh black pepper, to taste
2 tablespoons nutritional yeast

What you do: 

1. Preheat oven to 400 degrees F. Whisk together the remaining ingredients.
2. Toss with the cauliflower.
3. Bake for 40 minutes, stirring once about halfway through the cooking time.
They're ready when they get nicely browned and they're tender but not mushy. I like to leave mine in until they get chewy blackened parts, but that's just me.
These are soooo good - sometimes when I want a light dinner I'll just make a batch and eat it all myself, easily as good as French fries!

SO HOW'D IT GO?

awesome!  i think i added more bottled lemon juice than 1 lemon might produce but they turned out great.  there was a bit leftover that i threw in the freezer, they were still delicious heated up in the microwave and i tossed a handfull of them into some veggie soup - these make a great side or appetizer!

Has anyone tried making this without the oil? I am trying to cut down on calories and fat, and I was wondering if this would work without it? Thanks. ???

I've made these twice using only a small drizzle of olive oil and they turned out great.  You definitely don't need all the oil, but I'd recommend at least sprayed the baking pan with some Pam to make sure they don't stick.

Sure it would work. Just add some water if you need more liquid!

Oh and to all of you who don't like cauliflower...try these, because I tried the cauliflower plain first and hated it, I hated it so much in fact that I wasn't going to even bother making these because I figured I would hate them too...So wrong, LOVE LOVE LOVE them. TRY IT! So tangy and delicious! Thanks so much for sharing this recipe.

I'm scared of cauliflower...I don't even know if I have ever eaten it, but for some reason I don't think I like it. Having said that, after reading everyones reviews, I wanna try these. I will let everyone know how it goes. ::)

Before this recipe, I ate cauliflower maybe once a year.  My wife and I probably eat this twice a week.  She is a very picky eater but loves this.  I never measure and it always seems to taste good. ;)b

I know I say it ALOT but yummmmmm! I didn't have any grainy mustard, just regular old yellow, but it still turned out great! I made this alongside my boca burger, and they were just as tasty and far healthier than a pile of greasy french fries.  I made them a little spicy too by adding some red chili flakes and that was super good! Thanks so much for this, it will definately be added into the rotation!!

;)b YUM!!! These were sooo good! Never had anything like this before. I wish I had 3 more heads of cauliflower... I only had one and it was gone in seconds!!

The only change I made was that I used basil instead of dill because I was out. I bet dill would be even better! (If that's possible!)
