Carob Cupcakes (muffins)
1/4 cup non-hydrogenated margarine
3/4 cup maple syrup*
1/4 cup carob powder
1/4 cup boiling water
1 cup whole wheat pastry flour
1 cup oat flour
1/4 teaspoon sea salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon Ener-G Egg Replacer mixed with 2 tablespoon water.
1 teaspoon vanilla
1/2 cup vanilla soy yogurt
Here's a very simple vegan recipe with no white flour or white sugar. Try 'em!
Combine margarine, syrup, and carob powder in large bowl.
Add boiling water and mix together until smooth and well blended.
In another bowl, combine both flours, sea salt, baking powder, and baking soda.
Add dry mix to carob mixture.
In small bowl, whisk together egg replacer and water.
Add egg replacer, vanilla, and yogurt to batter and mix well.
Put batter in greased 12 muffin tin.
Bake in pre-heated 350 oven for about 30 minutes. (But my oven stinks, so I had to put it higher)
Let cool and then optionally frost. I'm sure there are great recipes for frosting in this database.
SO HOW'D IT GO?
I happened to have all the ingredients for these in my kitchen. Delicious! Definitely turned my lousy day around. I added a lot of liquid though, until it looked like proper batter. I'm pretty sure I forgot one of the ingredients somewhere, but oh well. They are awesome and they rose a lot more than most of the muffins I make.
These turned out really well.

These muffins turned out very tasty and moist. I substituted agave nectar for maple syrup and added a little soymilk to the recipe based off of the last comment. The result was very light and satisfying. Thanks!
The receipe was very easy and turned out quite well for me. I didn't have any carob powder on hand so I substituted cocoa powder instead. The cupcakes weren't as moist as I would have liked so maybe next time I'll try adding more yogurt or maybe a bit of soymilk. Overall, they very good though :)
