Caribean Rice with Tofu
1 package tofu (firm), diced
1/2 cup Italian dressing
1/4 cup soy sauce
1 large onion
1 packet of Sazon Goya
3 or 4 tablespoons minced garlic
1 cup vegetable stock
2 cups white rice
1 medium tomato
1 8 oz. can of tomato sauce
1/4 cup Sherry wine
3 tablespoons oil
3 cups water
1 tablespoon salt
Mix dressing with soy sauce, and marinate tofu for 1 to 2 hours, or as desired.
Sautee onions, garlic, pepper, and tomato. Add tomato sauce and Sazon Goya after onion is slightly browned. When sauce is boiling, add the vegan wine, and all the ingredients EXCEPT rice, water, and vegetable stock. Let it boil for a minute, while you rinse the rice with water (in a drainer-thing). Add water, vegetable stock and let it come to a boil. Add rice, lower the heat and cover. Let it cook for 20 minutes or until water is almost completely absorbed.
Uncover, stir, and add tofu and cook for 10 minutes more. Serve.
