Cantaloupe Muffins

What you need: 

1 cup of flour
1/2 cup of oats
3/4 of a cup of brown sugar
1/2 teaspoon of salt
2 teaspoons of baking powder
1/4 teaspoon of ginger
1/2 teaspoon of cinnamon
pinch of allspice or nutmeg
1 cup of cantaloupe puree
canola oil cooking spray or muffin baking cups

What you do: 

Based on Simple Muffins recipe on VegWeb.
Preheat oven to 400 Fahrenheit.
Combine flour, oats, sugar, salt, baking powder, ginger, cinnamon, and nutmeg in a mixing bowl. Mix well.
Cut about a third of a cantaloupe into chunks and throw into a food processor. Puree until you get one cup.
Add puree to mixing bowl. Mix together.
Place baking cups in muffin pan or spray muffin pan with cooking spray. Pour mix into muffin pan.
Bake for 20 to 25 minutes. Keep an eye on the muffins, and when they look and smell done take them out of the oven.

I just put these together tonight.  Not sure if I am missing something, but I barely got 11 muffins out of the batch.  It said 17 servings.  Any ideas as to why?

I made these last night and they are AMAZING! I cannot stop eating them. I'm not even the world's biggest fan of cantaloupe, but these muffins are awesome!! I made half of the batch regularly, and then decided to add vegan chocolate chips to the second half (so delicious!)

 

2 things I'd recommend:

Use quick oats - I used regular Quaker oats and they didn't really cook all the way

Keep an eye on these! I set my timer to check on them after 18 minutes and they were already perfectly done. Next time I'll probably check after 16 or 17.

This recipe is EXACTLY what I needed for my overripe CSA cantaloupe! So quick and easy, and all the ingredients on hand. I poured all of the batter into a loaf pan (28 min baking time) and cut it into 4 large slices to have for my breakfasts -- except the taste test nibble resulted in my promptly gobbling down the rest of the slice, topped with lots of Earth balance, so now I have only 3 slices left. //swoon! This is a recipe I will make again and again (it would even be a good jar gift, just layer the ingredients in a mason jar, label with instructions for adding cantaloupe puree and baking temp/time).

P. S. I turned the rest of the puree into a cocktail slushie with some orange liqueur and peach schnapps.  >:D

what form were oats in? rolled? steel cut? powdered?

These were absolutely divine! I didn't have enough cantaloupe for 1 cup of puree, so I did a mixture of cantaloupe, apple sauce (homemade, using golden delicious apples, skin left on) and fresh figs. I also mashed the fruit by hand rather than using a food processor, as I like the texture this gives. I only used 1/4 cup of sugar and this was plenty sweet enough for my sweet-toothed husband and I. They were a great success, possibly some of the best muffins I've made. Thanks for posting this recipe!

These were awesome!  I never would have thought to use cantaloupes in muffins.  Because I am not a huge fan of cantaloupe, I pureed a small banana and some Strawberry Banana Vitasoy with it.  I also used half spelt/half unbleached white flour and demerrara sugar.  They are very fruity, but neither of the fruits overpower the other.  They kind of have a fruit punch flavor.  I definitely recommend these.
