Calzone Filling

What you need: 

3/4 lb firm tofu, mashed
1 cup mushrooms,sliced
2 stalks celery, sliced
1/2 cup green pepper, chopped
2 tablespoons onion, diced
2 cups spinach, optional
1/4 cup nutritional yeast flakes
1/3 cup white wine
1 tablespoon basil (dry) and 2 tablespoon chopped parsley (fresh)
2 teaspoons oregano
2 teaspoons minced garlic or 1 teaspoon garlic powder
2 teaspoons vegan parmesan cheese
1/2 teaspoon sea salt and black pepper
1 tablespoon olive oil (optional to cooking spray)

What you do: 

Mash tofu in a medium size bowl and set aside. Sautee in olive oil or spray onions, mushrooms, celery, green peppers for a few minutes to soften. Add oregano and basil and garlic. Mix in spinach at the end and let it wilt. Take vegetable mixture and add it to tofu.
Add wine, nutritional yeast, salt, pepper, parmesan and parsley to tofu mixture and mix again.
Cut dough into 5 pieces. Form a ball and roll it out on a floured surface till its 6 inches in diameter. Take 1/3 cup of the filling and put it in the center of the circle. Using your hands, bend one side of the circle over the topping and use a fork to move the filling along the crease. With your finger dab water on the bottom edge to seal the top dough. Flute the edge or take a fork and press the tines to seal around the filling.
Bake at 400 degrees F for 40 minutes or until golden brown.
Melt soy mozzarella cheese on top if you want, add chopped tomatoes with it as well. Serve with a fresh green salad.
VARIATION: Omit spinach and add 1/8 cup or so of sundried tomatoes pureed, 10 black olives and 2 tablespoons green onions.

SO HOW'D IT GO?

this is good and versatile.  I did not use tofu or parmesan cheese, just 1 cup of spinach, and I also added a little bit of tomato sauce and some crushed red peppers to make it spicy.  it turned out really well.

I just used a simple fast recipe:

1 cup all purpose flour
1 cup whole wheat pastry flour
1 cup whole wheat flour
1 tsp salt
1 tsp sugar
1 package active dry yeast
1 cup boiling water

First preheat oven to 350 degrees F.  Combine all dry ingredients well, then mix in boiling water. 

  I would suggest using room temperature water. The boiling water will completely kill your yeast. Also, add a couple of tablespoons of olive oil to your dough if you like.

Delicious!! Of course, as always, I had to change it up a bit. I used a whole 14-oz tub of tofu (I hate using partial amounts) - I would recommend pressing the tofu, though, which I didn't do, and it made the filling a bit too liquidy. I also browned it in the pan before adding the vegetables. I used half an onion (about a half cup) instead of only 2 Tbsp and increased the garlic. I also used frozen spinach - it worked just fine. I added several sliced green olives, used extra herbs (including rosemary and crushed red pepper). I topped the calzones with grated monterey jack cheese (vegan, of course!) - it was all that was available at the store, but it tasted great. I got 6 HUGE calzones - next time I will definitely make them smaller! My biggest problem was the cooking time - at 40 minutes, mine would have been burned to a crisp!! I covered my first batch with foil halfway through because they were already golden brown on top, but the bottom still burned. I am about to bake my second batch, which I will still cover for half the baking time, but I am also cutting it down to 30 minutes - I will post the results. I recommend serving this with warm marinara for dipping! YUM! Oh, and I ended up using the "No-Bread-Machine Pizza Dough (http://vegweb.com/index.php?topic=8065.0), which worked great and made the perfect amount for the filling. I will definitely use this recipe again, and I can see many possible variations for the future! :-)

I just used a simple fast recipe:

First preheat oven to 350 degrees F.  Combine all dry ingredients well, then mix in boiling water.  Knead the dough to work in all the flour and mix everything up well.  Divide in to desired calzone number/size and roll out each portion.  Place the delicious filling on one side and fold over like a semicircle.  Seal by wetting edges.  Prick tops and bake for 25 minutes, flipping once during cooking.

Note: you don't need to use the three different kinds of flour, I just wanted to add in whole grains.  It works better using just all purpose flour.

This sounds really tasty, but what kind of dough do you use? Homemade, or storebought (and if storebought, what brand/store)? Thanks, can't wait to try it! :-)

Delicious!

I omitted the wine and mushrooms (because I didnt have any! haha) replacing with water and celery, respectively.  I also browned the tofu in a skillet first.  Very good, thanks for the recipe!!
