No-bread-machine Pizza Dough

Ingredients (use vegan versions):

    1-1/2 cup warm water
    1 packet yeast
    1 teaspoon salt
    3 cups white flour
    2 tablespoon sugar
    1 cup cornmeal
    1 cup whole wheat flour

Directions:

Soften the yeast in the water. Add salt and vegan sugar. Stir well.  Add wheat flour and cornmeal plus two cups white flour (until dough isn't sticky). Knead in the rest of the flour, add more if necessary to make a stiff dough.

Let rise for 5 minutes to 1/2 hour (depends on how much time it takes to cut toppings). Cut dough in two, roll out to fit pans.  Sprinkle the pans with cornmeal to keep dough from sticking.  Top and bake at 400 degrees for 12-15 minutes.

Serves: 2 pizzas.

Preparation time: 10-15 minutes.


I tried this with chopped up home-grown tomatoes (the best kind!) and feta cheese, but it turned out that the crust was the best part!!!  Thanx so much for such a wonderful recipe!!  I loved it!

I made this the other night and it was great!  I added dried basil, oregano, and rosemary to the dry ingrediants though.  Has a very nice texture.  I made a pizza with half the dough and used the rest to make little spinach, garlic, and olive turnovers which I took to work for lunch today.  The dough even survived the reheated in the microwave test! Thanks!

i lOVE THIS pizza! i made it for my bf and he loved it, even though he's an omnivore.  it tastes even better if you put herbs in the crust (basil, oregano)  thanks a lot!

i love this recipe!!! i just made a pizza from scratch and the crust was the best part!  Smiley i used kamut flour instead and course grind corn meal.  Cheesy  super yummy!

Hey l337vegan1, Not all of us here are vegans. When I make a pizza, I use mozzarella [tremble in awe]. I appreciate reading other peoples comments and ideas....even if they contain things I might not eat.

I have such difficulty with pizza dough. Why does it always turn out so hard? When I made this crust it came out like a rock!

assilembob, try cooking the pizza on a pizza stone instead of a regular baking sheet. Pre-heat the oven with the stone inside of it, so that the stone heats up with the oven - this should allow the yeast to rise nicely. Also, don't use a rolling pin; shape the dough with your hands and you'll lose fewer yeast belches.  Hope that helps!

I made this dough about half an hour ago and its definitely not rising AT ALL.  What did I do wrong?  I followed the recipe except I halved it to make just 1 crust and added some fresh herbs to the dough.  I always seem to have problems with rising.

kitreece22 -hoping you're not cutting the yeast content in half.  Half recipe will still need a bit more than half of the original yeast to get the same rising power.  Also - test your yeast by disolving it in luke-warm water with a bit of sugar.  If it has foam on it in 5 minutes, its active. If not, its broken.

Great dough! I used this to make calzones, and it worked great and was very easy. I loved the cornmeal addition. I did add a little olive oil. I halved my second batch but used 1-3/4 tsp yeast (more than half of a packet) due to meat's recommendation, and it rose just fine. I can't wait to try this with regular pizza!
