Cajun Okra Stew

What you need: 

6-7 fresh large tomatoes
1 can lima beans
1 can blackeye peas
1 cup fresh chopped okra
1 onion, chopped
2-3 cloves garlic, chopped
1 tablespoon cajun seasoning
pepper and salt to taste
1-2 teaspoon olive oil

What you do: 

Heat olive oil in a large stew pot. Add chopped onions and garlic and saute for 2-3 minutes. Add chopped tomatoes, lima beans, blackeye peas and cajun seasoning. Bring to a boil, stir well, then reduce heat and simmer on low for 30 minutes, stirring occasionally. If the stew gets too thick add water as needed. Add chopped okra, stir well. Simmer for another 15 minutes. Serve over brown rice.

SO HOW'D IT GO?

This is just what I've been looking for! My garden is putting out TONS of okra this year and I'm always up for a new recipe.

I used frozen okra and black eyed peas. I also didn't have enough tomatoes =( so I used 3 fresh and a can of diced. Lots of cajun spices. MMMM  :)>>>

So, so good!  I couldn't find fresh okra or canned black-eyed peas, so I used frozen versions of both.  Also (when I saw how much it was going to make and realized I had a lot more people to feed) I added leftover cabbage soup from the night before (just tomato sauce, V8, and green cabbage), and I used a LOT more Cajun seasoning than called for...  Anyway, it was great!  One of the most popular dishes at the potluck and nobody there was vegan.  ^-^
