Butternut Black Bean Soup
What you need:
oil, for frying
1 medium onion, chopped
1 clove garlic, minced
1 (15 ounce) can black beans, with liquid
1 butternut squash, cubed
1 cup crushed tomatoes
1/3 cup tomato paste
1 1/2 cups water
1 tablespoon fresh parsley
1 teaspoon cumin
1 teaspoon salt
1 teaspoon paprika
1/4 chipotle pepper
What you do:
1. Saute onion and garlic in oil, until soft. Add black beans, cubed squash, crushed tomatoes, tomato paste and water.
2. Let this simmer for 15-20 minutes until squash is soft.
3. Add parsley, cumin, salt, paprika and chipotle, let simmer for another 5 minutes.
4. Serve with crusty bread, and top with dollops of vegan sour cream/yogurt, and a healthy sprinkling of green onions.

This is a one pot meal. Just hand over the biscuits and we are good to go. What a lovely blend of ingredients and spices.
i totally loved this, too. it also keeps well in the fridge, i've been eating it for a week!
This was excellent - but I added a ton of stuff to it...
I used 2 cans of tomatoes and added a can of corn, mexican oregano, chipotle powder, cayenne, cumin, cilantro, chili powder and 2 bouillon cubes.
More like a chili, but soooo delicious!
The butternut squash is amazing in this!!
I really liked this recipe! I used a dash of chipotle powder as I didn't have an acutal chipotle pepper on hand. I put some toffuti sour cream on it and some green onions. I am looking forward to making this again! Thanks for the recipe. :)
This is very tasty, more like a butternut squash chili than soup. I followed the recipe pretty much exactly, though I didn't have chipotle pepper so I added a couple of dashes of red pepper flakes. I had to add about 2 cups of water total. Very yummy and filling, thanks! ;)b
This soup is very good. I assume "a can" of beans is like 2 cups? I boil my own. I added like 2 cups of squash chunks, but it needed a bit more liquid as it cooked. I didn't have any chipotle so I added a touch of spicy salsa. Delicious!
