Buffalo Tofu a la Jessica
1 (14 ounce) block extra firm tofu, frozen, thawed, and squeezed
1/2 tablespoon vegan margarine
1/4 cup + 2 tablespoons hot sauce (I use Frank's)
2 tablespoons cornstarch
1/4 cup unbleached white flour
1/4 teaspoon sea salt and cracked pepper
1. Cut tofu into 1" cubes. Squeeze again gently to remove all excess water. Preheat oven to 425 degrees F. Melt margarine in a deep bowl. Add the hot sauce and stir to combine.
2. In a separate bowl, combine cornstarch and flour. Add salt and pepper. Coat a small baking pan with non stick spray, and mist tofu lightly.
3. Take each tofu cube, gently roll in flour mixture to coat, then dip in hot sauce mixture to coat the flour. (You shouldn't see any white flour peeking through)
4. Place on baking sheet and pop into the oven until coating is dry and slightly crispy, about 30-40 minutes.

Is there something you can use to replace the flour? I recently had to go gluten free, but would still love to try these.

Can you eat rice? Rice flour works well for coating and frying things -- sometimes better than wheat because it actually gets nice and crispy. :)
