Broccoli Grape Salad

What you need: 

1 cup vegan mayonnaise (I use Vegenaise)
1/3 cup sugar or sugar substitute
1 tablespoon vinegar
1 head broccoli, cut in small pieces, buds only
2 cups seedless grapes, red or green, halved
1 cup celery, chopped into small pieces
1 cup golden raisins
1/2 cup slivered almonds
2 to 3 green onions, chopped
1 (8-ounce) can sliced water chestnuts, finely chopped (optional)
imitation bacon (optional)

What you do: 

We prefer veggies chopped fine, but can be made chunkier.
1) Dressing: In a bowl, mix together vegan mayonnaise, sugar, and vinegar. Refrigerate.
2) Salad: Combine remaining ingredients, except imitation bacon.
3) Pour dressing over salad and mix well.
4) If using imitation bacon, add right before serving.
