Boyd's Zucchini Bread

What you need: 

Substitute for 3 eggs
2 cups of raw sugar
2 cups of shredded Zuchinni
1 cup of vegetable oil
3 cups of all-purpose flour
3 teaspoons of baking soda
3-4 teaspoons of cinnamon (according to taste, I prefer 4 while dad prefers 3)
1 teaspoon of salt

What you do: 

Start by preheating the oven to 350 degrees. Grease the pans with your favorite nonstick baking spray. Mix together the substitute for three eggs with the sugar and oil. Then mix in the 2 cups of zucchini. Sift the flour, baking soda, salt and cinnamon into the wet mixture. Fold together the ingredients, then mix until smooth. Split the batter between 2 bread pans and place into the oven. Bake at 350 for one hour. Remove from the oven and let cool on a wire rack. Cut and enjoy!
Source of recipe: This is the veganized version of my dad's recipe. We've made this bread for years, but I had to actually figure out measurements since my dad never measures anything.
