Black Joe Cake
3 cups all-purpose flour
2 cups white sugar
6 tablespoons unsweetened cocoa
2 teaspoons baking soda
2 cups water
1 cup vegetable oil or apple sauce
2 tablespoons vinegar
2 cups confectioners sugar
1/4 cup softened butter
3 tablespoons strong brewed coffee
1 teaspoon vanilla extract
1. Preheat oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans.
2. In large bowl, combine flour, sugar, cocoa powder, and baking soda; mix well. Add water, vegetable oil, and vinegar; beat until smooth, then pour into cake pans.
3. Bake 45 to 50 minutes, or until tooth pick inserted into the center of the cake comes out clean. Cool before icing.
4. Coffee Icing: In a bowl, combine confectioners' sugar, margarine, coffee, and vanilla extract; use an electric mixer to beat until smooth. Add more sugar for thickness, as needed.
Source of recipe: I found this recipe some where lost on the internet and had it written down in my notebook for a while. Thought I'd give it some use C: I tried making this for my mothers birthday and she loved it, I used a coffee icing that really made the whole cake. This cake is even better the next day. Enjoy!
