Black Bean Mango Quesadilla

What you need: 

oil, as needed
1/2 red onion, diced
1 ripe mango, diced
1 (14 ounce) can black beans, drained
2 handfuls baby spinach
1/4 cup water
2 teaspoons garlic powder
1 tablespoon taco seasoning
black pepper, to taste
1 tortilla

What you do: 

1. Preheat oven to 350 degrees F. Heat oil in a pan. Add onion, and saute.
2. Add mango, cook for a couple more minutes. Add black beans and spinach.
3. Add in water, garlic powder, taco seasoning, and black pepper. Simmer for 5 to 7 minutes, or until water is mostly reduced.
4. Spoon mixture on 1/2 the tortilla and fold. Pop in the oven until tortilla is warmed and as crispy as you desire.
Great with fresh salsa and guacamole!

Really yummy. I posted the picture, and I just opened one of the slices up to show the filling. Of course, I put it back together for serving :).
