Black Bean & Corn Summer Salad

What you need: 

1 – 15 ounce can black beans
1 – 15 ounce can yellow corn
1/4 red onion, diced
1/2 green bell pepper, diced
1/2 pint cherry tomatoes, diced
1 avocado, diced
1 lime, juiced
Cilantro, to taste
Salt and pepper, to taste

What you do: 

1) Rinse and drain beans and corn in cool water. Combine with onion, bell pepper, cherry tomatoes, and avocado in a large bowl and mix gently.

2) Add lime juice, cilantro, and salt and pepper to taste. Cover and refrigerate for 20 minutes before serving to allow flavors to marry. Enjoy!

SO HOW'D IT GO?

De-lish!!  Added some sliced green olives with pimento and some of the brine.  Added more lime too.  Served with smashed potatoes.  Very colorful and delicious!  Thanks darkling_glory!
